lunch ideas?

I’m a bad boy. I often don’t bring my lunches from home so a) I don’t always eat very healthy and b) I spend too darn much cashola on my lunches.

But I have a heckuva time thinking of good things to eat.

Here are my requirements:

-should be fast and easy to prepare.
-healthy would be nice but you don’t have to be a puritan about it ;)
-I can’t afford caviar every day.
-I have access to a fridge and microwave at work so stuff can be stored and then heated up.
-I like variety. Meaning, not a lot of food turns me off. In other words, I am on a “see food” diet.

Got any ideas?

Take-along lunches require some thought. Personally, I’m a big fan of the Leftover Wrap. Put leftovers from supper the night before (chicken, stirfry etc.) along with rice or noodles in a container. Heat up container; then throw it on a large wrap and roll it up. You can add extras, or not; and you can keep a fun low-fat sauce (like Thai peanut or whatever you like) in your fridge at work for extra zip. I ate that a lot when I was a 9-5er. Filling and easy.

Ditto on the leftovers. Caseroles in tupperware work great. Although, I usually don’t heat them up. Too lazy. I just eat them cold. A cold lasgna sandwich is damn good.

I deliberately cook extra portions so we can use the leftovers for lunch. When I get time I also make rice bowls(rice/meat/veg w/soy or teriyaki) in microwaveable dishes or burritos (rice/beans or hasbrowns/veg/meat/cheese etc) and freeze (keep out and it thaws in time for lunch). Since I’m a control freak I also store a few cans of soup, crackers and nutella in my desk.

I’m a big fan of the leftovers, too. We do a lot of chili during the winter, and an easy thing to do is to take a baggie of Fritos (corn chips) and a baggie of shredded cheddar. Nuke the chili ’till it’s hot, drop in the fritos and cheese and stir it up, and YUM. We minimize the artery clogging by using a 50/50 mix of 97% lean ground beef and lean ground turkey, so the chili itself is pretty healthy (salsa, beans, and meat and spices).

Other lunch favorite is the random bag of fruit/veggies.

Always remember to bring something for dessert, though. :)

Try my veggie beef soup. It makes lots and freezes well. I also found another good quickie is those thick crakers like Ravita, each cracker holds 2 slices of tomato, add a slice of cheese (havarti is good) top mushroom slices and nuke for a few minutes to melt the cheese. Same thing also works good on flat breads.

I’m a creature of habit. Every day I bring a cheese string, an apple, two pieces of rye bread and a packet of Shopsey’s Corned Beef to work. At lunch time I pop the Corned Beef in the microwave, and spread the mustard I store in the fridge at work on my bread and viola – a hot corned beef sandwich every day! Together with my cheese and apple I end up getting a serving of dairy, fruit, breads and cereal and protein at lunch! Mid afternoon I have some carrots, and mid-morning (if I’m lucky enough to have the time) I have an apple juice drinking box and a multi-vitamin… I’ve also had Honey Nut Cheerios for breakfast every morning for 10 years… (Either I’m lazy or I suffer from OCD…)

Blogfather, you should really try eating some Easy Mac. It’s so good and it’s so cheap. I like to put it all in a zip lock bag, add water, zap it, then when it take it out, I add the cheese, seal the bag, shake it all around, and voila, awesome easy mac. Don’t forget to bring a bowl in spoon.

I wish I could help – I spend too much money on lunch myself though. I’ll do sandwiches and/or the Campbell’s heat-in-the-cup soup (potato, tomato, etc, are nice) occasionally, with chips. Mos of the time though I find that I relish the mental break involved with leaving the office, sitting down, and enjoying lunch. Sorry, that’s not overly helpful I know.

I have been making my husband’s lunches for over 20 years – tell me about running out of ideas!

My husband loves Italian food. When we go to the deli or an Italian restaurant, we always get extra meatballs. Just add some kind of bread or roll (you can also add cheese or peppers if you like).

One trick I did learn over the years – always pack the bread separately. Some days my husband doesn’t have time to eat, and the sandwiches would be all soggy. Now I pack the bread in one ziploc bag and the meat in another. He keeps condiments in his fridge at work.

We do the leftover thing quite a bit. Whatever we have for dinner, I just make a little extra, and he will get the leftovers later in the week.

Meat loaf (slice the leftovers)

Chicken (whatever is left from baked/grilled chicken dinner) or even grocery store deli chicken

Hot dogs

Casserole

Baked ham slices

I try to buy different kinds of breads and rolls to keep it interesting. And always! include a fresh or canned fruit or a fresh or canned vegetable.
