Truffles for Friday
I made some truffles last night and had the chance to take some pictures of the process, like I did with the raspberry cups. I actually did this twice because I screwed up the first time and got water into the chocolate. I won’t go into details but even though it was indeed an extremely small amount, it totally ruined everything and I had to start over again. Anyway, here goes.
Following the recipe I did last night, I put 1 stick of unsalted butter, 2/3 cup of heavy whipping cream, and 6 tablespoons of sugar into small pan and heated it to it just started to boil.
You’ll want to do this slowly so you don’t burn it. Since there are going to be rolled and not dipped, I use a little less cream to keep them firmer. In the mean time, I put 2 bags of semi-sweet chips in a large mixing bowl. If you’ve kept them someplace cold, you’ll want to make sure they are at room temp (or even a little warmer) before doing this so that they melt well.
When the cream mixture started to boil, I poured it over the chips in the bowl and let it stand for 1 minute while the chocolate melted.
In the mean time I filled another bowl with ice and some water. Then I added 3 tablespoons of vanilla extra to the chocolate bowl and mixed with the blended until it was smooth.
Then I put my chocolate bowl inside the ice bowl to start cooling it.
Then I mixed and mixed and mixed, until it began to thicken.
Eventually it became thick enough that it could stand up on its own. Don’t want to get it too thick, or else its hard to dispense.
Then I filled my pastry applicator and used my specially modified tip to dispense out blobs of chocolate for the truffles onto wax paper in the pans.
Yes, I am very aware of what the blobs look like, because I have a 7-year-old son. :D
Anyway, once they were dispensed, I put them in the fridge for about 10 minutes, while I cleaned up the giant mess I had made. Then when they were kinda hardened up I rolled them by hand into balls and then rolled them in grated chocolate, that I made from a Ghiradelli semi-sweet bar using a potato peeler.
Here they are all done!

Yay! It’s Chocolate Friday! I should take the day off, maybe start a Chocolate Parade, or something. Those truffles look YUMMY.

Is everyone in your family each about 500 pounds? I definitely would be if I had someone to make me chocolate!!!! (my apologies if they are 500 pounds. foot in mouth).

It’s not fair, Jon. Really. My mouth is watering…and it’s not even lunch time. MY GOSH…those look absolutely wonderful. Of course, the bowls of chocolate themselves look wonderful, too.

Nice to see that you are practicing for when you’ll be making me mine…and…I’d like to point out that there’s a good chance that I’ll get to meet Jeff which means we will STILL be even…so I’ll see your Pam and raise you a Jeff.

Oh I really really love the new look blog. I have never had truffles before (I havn’t really lived yet!) Who cares what they look like (had a little chuckle imagining your 7 year olds comments though) they sound delicious

I must echo with Dawn - now I know why you love running so much - seruously, one of my biggest motivators to run is the fact that I enojoy food more when I’m hungry in an outdoorsy, red-cheecked way :) Have you ever considered opening up a chocolatier, since your lovely missus can’t eat the choccies you could maybe share them with people who appreciate the work of a true artist :) Have an awesome weekend!!

Oh, I love the new look of your blog! Very clean. I’ve been meaning to change mine - now I have inspiration. And your truffles. Wow. I’m thinking of making some as guest favors for the party we’re throwing this October to celebrate our nuptials. These raspberry ones sound great.
